Lindsay’s Newport Beach Scramble with Avocado Toast

Today, I woke up with the overwhelming desire to see the ocean.

But not any ocean – the ocean by my friend’s house in Newport Beach, California. Her backyard is one of my favorite places in all the world. No matter where I am in life, no matter what I do – the feeling of complete happiness I experience every time I get to go back never fades.

As I am writing this, I can see it all clearly in my mind: Waking up early and going out on her patio while it’s still chilly and overcast. Drinking coffee. Chatting and leisurely flipping through gossip magazines. Knowing the waves are only a block away. Tasting the salt in the air. The breeze, the flowers, the energy…it’s intoxicating!

Fernweh.

If you also have an acute case of wanderlust but cannot make it to the beach anytime soon, make my friend’s 5-minute, 5-ingredient breakfast or lunch recipe today. You, too, will be California dreaming in no time!

Ingredients:

  • 1 cup cherry or grape tomatoes, halved
  • 1 scallion, finely chopped
  • 2 organic eggs
  • 1/2 ripe avocado
  • 1-2 slices of clean bread, toasted
  • Coconut oil, sea salt and fresh ground pepper to taste

Instructions:

  1. In a medium pan, heat 1 tablespoon coconut oil over medium heat.
  2. Add the scallions and sauté for a couple of minutes until soft.
  3. Add the tomatoes, salt and pepper. Give everything a quick stir and cook for another minute.
  4. Crack the eggs over the tomato mixture and scramble carefully. Cook until the eggs have the desired consistency.
  5. Mash and spread the avocado on the bread. Add salt and pepper. Serve immediately.

Teachable Tips:

  1. Be careful not to overcook the tomatoes or they will sort of fall apart. Just until they are hot is sufficient.
  2. “Clean bread” means different things to different people. Some say it has to be gluten free, others say bread altogether is not a clean food. I use either organic whole grain or sprouted whole grain bread with short ingredient lists. My current favorite is Squirrelly.
  3. I’m sure you’re tired of hearing this but avocados are super good for you! Avocados contain almost 20 vitamins and minerals such as vitamins C, E, K, and B-6, as well as riboflavin, niacin, folate, pantothenic acid, magnesium and potassium. They also provide lutein, beta-carotene, and omega-3s. In addition, avocados are the only fruit that contains a substantial amount of monounsaturated fat known to improve heart health and lower cholesterol. Healthy fat is essential for every single cell in your body. It increases vitamin and mineral absorption and even helps boost brain and immune function. My whole family eats avocados in such massive amounts we should get serious about planting a tree or buying stock in them…either way.
